Discovering the world of non alcoholic creations by Bram Klinge For my French & Japanese fine dining restaurant Ukiyo I have invited Bram over for 3 days to collaborate to make a new bar drinksmenu and a whole new non alcoholic pairing for our menu. to say the least this was eye opening on many different levels. Before his arrival I was given certain tasks to go out and look for local fruit farmers and wild farmers for plants and herbs. I’ve learned a lot just by visiting them and much more whilst using their produce with Bram. Working alongside him gives you inspiration, energy and only good vibes.
